I'd also seriously consider buying the shortest (54cm) fork, leaving it as is, and installing a headset spacer of appropriate height. Yes, it looks strange initially but when you eventually lose flexibility it will provide added height adjustment and save you the cost of buying a Technomic or similar stem with a longer quill.
