Just ride your new nice bike and replace things as they wear out.
If your goal is to avoid flats, go tubeless with sealant and/or protective tires. New wheels isnt'gonaa do anything for that regardless of size.
I kinda do have upgraditis hahaha
The extra wheels were to have wheels/tires ready to switch at whim..

As for tubeless.. Im tubeless now. I just dont see any good touring tires for tubeless..

The Giant Sycamores are ok.. but I dont feel super confident at higher speeds or in turns
