FSA stuff is also heavier than claimed weights wuite often. Although your stem is pretty and probably stiff, a Ritchey WCS stem with a Ritchey WCS bar will probably cut 100-150 grams. Ritchey stuff can also be had for cheap, well cheap in comparison to other high class stuff.

Tires that come in around 180-200 grams(that also means no 25s) can be reliable and will cut weight.
