I used to deliver papers way back in the 80s on my Kuwahara Lazer-Lite, 20 x 1.50, sun, rain, or snow. If it dropped below -15 I'd put on my full-face race helmet, but otherwise, no other concessions to the snow - just balance and effort.
The fatbike is interesting. The flotation of the wider tires seems oversold to me (or maybe I'm just too fat), and as "fatbike trails" appear to be universally groomed (like an XC ski trail) it appears that maybe it isn't just me that isn't just plowing willy-nilly over fresh snow like the ads insinuate you can do.
My backyard trail I stomped flat with snowshoes when the snow was fresh at -1C, and at -15C, the trail surface was iron. I bet you could ride that trail on 45mm cross tires without breaking through. Where the "fat" appears to shine is a combination of smoothing out the high frequency bumps (because the trail is very bumpy) coupled to really good traction. The studded rear is 100% hooked up, and the nonstudded front is actually pretty good if you don't try and really lean on it.
To be really sure, I'd have to A-B-A compare it to my 26" full-squish XC bike... but to be honest, I don't really care that much.
