Is there any problem since - just going logically - there will be valleys on both side of the rim 0.75 mm wide if tape is centered on the rim?

The important thing is that the nipple holes are covered, it doesn't need to reach all the way from one sidewall to another.
Consider treating yourself to some tubeless rim tape. Being much thinner than Velox, it would make mounting tires a little easier.
