One of the advantages of the Shimano 2x11-speed conversion is the ability to finesse a 11-36 cassette with a compact crankset and a 105 or Ultegra long cage rear derailleur. I've been using this on my gravel bike with total reliability.
I don't suggest an 11-36 cassette on road bike except for the most extreme routes, such as the Dairyland Dare. You can use the deep range to preserve the legs. Once an event like this is completed, an 11-28 can be reinstalled.
I'll use a Campagnolo 13-29 ten speed cassette with a 50-34 compact on the Simoncini and a Shimano custom 12-32 eleven speed cassette with a 50-34 compact on the Eddy Merck. I'll select from multiple 11-speed cassettes on the carbon bike, depending on the route. The Merckx and the carbon road bike will be used on metric century, or longer, rides.
