That's a good place to start. I'm quite certain there is no factory compatibility chart for such things, so unless someone happens to have already tried, you'll have to take some measurements and see if something matches up.

FYI the Suntour factory part numbers for the axles are RH #53390201 and LH #53390211. They are not the same part numbers as the XC pedals' axles. But they look very similar, and might interchange. Again, you'll have to make measurements, as none are provided in the parts books.

That set screw only holds the toe strap in place. Nice to have, but it isn't necessary. You will probably have to take your pedal to the hardware store and try a few screws.
What do you mean by "weird"? It's almost certain to be a standard metric size. Probably a 4mm, looks like coarse thread, 0.7mm pitch? Just a guess.
