The chainguard was kinda cool, but pulling it off seemed like an obvious way to lighten the bike a bit. At least that's what I did about 40 years ago.
By chance, I also put Cyclone derailleurs on my Gran Sport too. Heck, they were well built, light, and inexpensive, so why not?
For pedals, I started out with KKT Pro Ace with steel plates (rails? .. I forget what the right term is), but these were rather heavy. I managed to find some Campy SL track pedals cheap, so they went on the bike. Many miles and years later, those Campy track pedals are now on my Raleigh Team bike.

As far as bar tape, I think that white tape would look best. Trying to match tape to the lagoon blue would be tough, and in my experience, mis-matched blues detract from the look....
