The implications of 2.15" tires on 17.5mm rims are that it may feel a little squirmy when cornering hard at lower pressures. It won't be a problem going straight with lower tire pressure or cornering with higher pressure.

You'll probably pressure a lower pressure off road and a higher pressure on pavement.
