The shifter has only 3 clicks in total. It looks like I am supposed to set it up so that the middle click is used as a trimming position for small chainring / small sprockets and large chainring / large sprockets but really the whole thing just moves too far, like the ratio is wrong. The shifter pulls about 17.5mm of cable in total. Anyone had experience setting these up?
They are made to work with a triple, not a double.
Campag 10s double systems only normally have a trim function for the inner ring .. correctly set up on an in-depth spec frame,, all 10s double systems post 2007 can reach all 10 sprockets at the back on the big ring with no need of a trim.
However, that assumes that a properly compatible lever and mech are being used on an in spec frame with the correct max sprocket size.
In your case, it sounds as if you are asking the lever to do something in conjunction with a FD as crank set it wasn't designed to work with (double FD and double chainset), so there will be a compromise.
Set up ignoring the 1st click so that you use only the 2nd two clicks on upshift. You should find that you can (assuming you have the correct FD type, QS, for the shifter) get all bar the bottom (biggest) one or maybe 2 sprockets with no chain rub on the big ring and all bar the top (smallest) two sprockets at the rear on the small ring.
On a triple this was also the case, (somewhat like Shimano triple MTB systems, too) where on the big ring, there was scrape on the biggest sprocket, on the middle, scrape on biggest and smallest and on the granny, scrape on the smallest or smallest two sprockets, as the sprockets where chain scrape occurs (the max crossovers) more or less duplicate ratios available elsewhere in the gearing range. This does not work out as well if you are a) running a double system and b) using a double FD with a different overall design, made for different ring sizes etc ... but with careful set up you can get a tolerable shift and a useful gear range with no glaring "gaps", depending on ring sizes and cassette size.
