I like bar ends too and have them on all my non drop bar bikes (two folders and an MTB) - never snagged them on anything. My Ergon GP2s are comfortable, but the wide/flat heel-of-hand rest actually impacts fold width (<1"), enough to get stuck in a few tight places I try to stash my bike.

Grips and bar ends are nice for my hands/wrists, but they don't change my back angle much which I prefer. Jury rigged an aero drop postion to my bars and that's done the trick - made my folder as comfortable as my drop bar gravel bike.
