I'll add a bit of advice for not ending up with another pinched tube. After mounting the tire, inflate to 5-10 psi. Then, push the valve stem all the way in until it 'bottoms out' against the tire tread, and let air pressure pop it back out. The valve area is the most common area to pinch and this forces the tube out from under the bead if it's stuck there. Now, slowly go around both sides of the tire, pushing the tire in from the rim and looking down to see the rim tape. If you see tube, that's a problem; it should be up inside the tire! Go all the way around both sides, working the tube out from under the bead anyplace you see it where it doesn't belong. Then, and only then, is is safe to inflate all the way.

Regarding which rim tape to use, wide rims that have an extra valley in the middle will take skinny tape, narrow rims (on most modern bikes) take the wide stuff. It sounds counter-intuitive, but with the wide rims all the spoke holes are in the 'valley;' so you don't have to cover all the way across.

I also don't like to use tire levers -- too likely to cause damage. When I do use something, I use my QuikStick. You only need one, and as far as I can tell it's unbreakable.
