Portland is a fun city to bike around, drove there last summer with some friends and spent time on the local paths and ended up a microbrewery to celebrate the days accomplishments. Wish it was closer than a 2 hour a drive. To bike there that's a nice challenge to set oneself, making it an overnight would definitely give you more time to explore.
