My initial thought would be to go with the Sora triple derailleur and adjust the limit screw as you suggested. But that would just be a guess. Given that it only takes a few minutes to swap the derailleur and do a quick setup so you can test them, I would simply try both and see with works better.

Are you sure you don't need the gear range offered by having the more expensive triple brifter and your small chain ring? $50 would not seem like much to me if I was on a hilly ride and ran out of gears to get me up and over the worst of the climbs.
