Upgrade the girlfriend.

But, seriously, you have to decide whether you want to restore or upgrade. If you want to restore it to the original specs, you can do a little bit at a time. I went for a full upgrade of my 1987 Bianchi, with a modern 11-speed groupset, new wheels, etc, and it cost me about what a new bike of similar quality might. One of the fun aspects of doing a restore is to hunt for and find the original parts at bargain prices.
