Bikes: '96 Litespeed Catalyst, '05 Litespeed Firenze, '06 Litespeed Tuscany, '20 Surly Midnight Special, All are 3x10. It is hilly around here!

Used with the same brake levers, the shorter ones will give less braking "power" (i.e. you will need more hand force for the same braking effect). Those shorter mini-Vs are intended for use with road brake levers that have higher leverage and less cable pull than the levers intended for full size V-brakes.
