Larger rear cassettes, as others have said. It wasn't until right now (r8000) that an ultegra rear derailleur could fit an 11-36 cassette.

Same thing with SRAM; you have to use a GX 2x10 RD to go to 11-36, with either 10s or 11s apex/rival/force/red
