The Fargo and Vaya are great options. The Cutthroat is basically a carbon Fargo but is likely out of your price range unless you get a deal.

These are mostly "adventure touring" bikes. None of them are going to be particularly "fast", but that doesn't seem to be what you're looking for. They're all designed to be versatile, tough, comfortable for long rides.
