Using my cell phone produces quite good pictures, but its a hassle to take it out of my jersey, unlock it and then take a photo. It involves me stopping way too much.

I was leaning towards a head mounted camera which you can just press a button and hopefully the picture will be good enough quality.

One of the fundamental components of photography is framing. This is achieved by looking through the viewfinder or view screen, but this is impossible if the camera is perched on your helmet. Framing before the fact, and camera on helmet don't mix. What you need is a camera that lets you frame after the fact. Some 360º cameras allow you to do just that. Shoot now, frame later in post-processing.
