Is there any terminology or classification that can be seen to know which model of shifter operates in which of these two fashions? Thumb and thumb or thumb and index?

Shimano came out with shifters that use an index finger trigger release 25 years ago, and there have been tons of variation since. Each shifter works the way it works with whatever fingers in whatever plane of motion that it is ergonomic to shift in. There's probably 20+ variations.
