My vision for my TdF was to do a full french re-build/upgrade on it to reflect its namesake.
It is all French, down to the tubs (Michelin Service Course tubs) and saddle (Reydel). Only non-french item on the whole bike is the Gitane pantoed stem (ITM) and the bar tape (Soma)
I upgraded pretty much everything on it, even the headset (from a B10 to a black anodized A9.).
Only questionable upgrade might be the RD where I replaced the Ofmega Mistral derailleur with a Simplex/Spidel LJ4000.
As you noted, the TdF rides really nice, much better than my Peugeot PSV, with hardly any flexyness in its frame that the Peugeot has. and quicker feeling than my Bottechia Pro SL, which it feels closest to, when it comes to ride quality.
