I have had regularly ridden bikes with bars that differed by 2 cm and i notice the difference in handling for the first minutes of a ride. For example, when my commuter (37 miles per day 4 days a week) had 40cm bars, and then on Saturday, I got on my bike with 42 s, the handling was awkward for the first 10 minutes or so. If the “wrong” size bars are in your stash, use them till you get the right ones. Otherwise, wait.
