Rear hub worn out - wondering whether to change wheel size and spec

Hi. I have a Dawes Galaxy circa 1985, an old war horse that has done me well for many years. I even shipped it over to my new home in Japan! Unfortunately, the rear hub is very worn, causing a rear wheel wobble that I nor various bike mechanics out here can solve. SO, I was thinking of buying a pair of used Giant Escape wheels in decent condition from the local second hand shop. The original wheel is a 27 1 1/4 size, 7-speed freewheel-type, and the Escape wheel is a 700c size cassette-type. Obviously, I'll need to get a new cassette, probably a new chain and adjust the brakes (to allow for the 4mm size difference), but are there any other issues? Can this be done!? I think the hub size (O.L.D) is 135mm on both wheels, so the basic fit should be OK. Any help or advice would be greatly appreciated.
