You spend 1 hour in the shop, but many thousand hours on the bike. Why would you not pick based on the merits of the actual bike?
If you are knowledgeable enough to recognize a good shop, you don't need one because you are... knowledgeable enough.
If you are not knowledgeable and need that good shop, you won't be able to recognize it if the sales person is slick enough.
