We've done that. I'd ride my mtb and she'd be on her road bike, and I'd sprint to catch up with anyone passing us, ride with them for a minute, then fade back to let her catch up. It was kinda fun, but the tandem made for a smoother experience. We'd be in the mood for one or the other at different times.
