Chainline w/Campy UT Crank and Wheel

OK, found a Campagnolo site but action seems slow, so over to here.

Scored a nice steel frameset (yeah, preowned) and the new Campy Centaur 11 speed looks good, reviews are good. Question is, how is chainline adjusted as the UT bottom bracket (68 mm BB shell, English threaded), simply threads into the shell (no adjustment there), so that leaves the wheel. Currently thinking of 32 spoke wheels, so I guess I could shim, but may consider Campy Scirrocco wheels, guessing no shimming there.

Am I over thinking this? Or in other words, buy my parts and bolt them up figuring Campy, Shimano, etc have thought this thru for me?

Also, how do you ensure there is no axial play in the crankset, as bottom bracket shell widths do vary a bit?
