I just ordered a 19-ounce collapsible electric kettle that weighs a pound that I can use to make coffee in the morning and maybe some oatmeal; all of the campsites have electricity. I also bought two Mountain Home freeze-dried meals that I can make with hot water that I can use if I want to eat at the campsite. The rest of the time I'll eat out.
