Shimano XT PD-M8040. Most comfortable I've tried. Come with 2 sets of pins. One set is short (2 MM) nonabrasive, that works well with normal shoes (does not tear them up). The other set is more MTB length. Comes in 2 sizes. Generous platform surface that doesn't cause hot spots on your feet. Looks at home on a road bike unlike some other more MTB styled pedals.
