Are you talking about now? You could probably still do the Katy Trail. Amtrak runs to both St Louis and Kansas City and another train runs between the two.
Amtrak also runs to Salt Lake City and a shuttle runs south (accepts boxed and unboxed bikes). That would make the Utah Cliffs Loop an option. You could also go to the Valley of Fire area and into Las Vegas. The same shuttle runs down to Vegas.
Also, the ACA Great Rivers and Underground Railroad routes run south from St Louis.
