It's important to note that black and white, coming as it does originally from color, can vary dramatically depending upon how you filter each color in the translation. The pink tubing typically would be a much lighter value in a neutral conversion. Instead, I filtered toward an infrared bias and really like the dramatically darkened frame.
Bitd I used to be a lithoman, and operate reproduction cameras, shooting copy paste ups and doing halftones. Our litho film needed red light darkroom, color pictures did not produce very well they came out flat in the highs and shadows heavy. Grayscale was needed for all non 4 color process printing. A shop could overcome this by using a Panchromatic film but that was difficult because it had to be used in complete darkness.
