Picked up a used Pentax DSLR last year and this is one feature I have played with. Just like film, a B&W photo really needs to be composed and exposed for that purpose. I learned from taking images in color for color they don't always translate nicely to B&W.
As these photos suggest, you can always desaturate in post. But to get the absolute best out of B&W you need to compose for it from the start. When you don't have color, the focus is all about the shadows.
