Help with 2000 Giant Boulder Se Trainer Tires

Hi! I'm running into a bit of trouble trying to find a trainer tire for my 2000 Giant Boulder Se to use on my indoor trainer. I'm looking for a 50-599 trainer tire (26 x 1.95) and am only able to find regular outdoor tires in this size. I've been able to find a couple of 26 x 2.0 trainer tires but am not sure if I could use one of those?

Also, I would like to purchase a new wheel to use on my trainer so that I wouldn't have to switch over tires on the same rim. I have a drop-in rear wheel, but the problem is that my bike is only a 7 speed cassette. From my research, I believe that I would need to add in a 4.5mm spacer to allow me to use a current wheel, since the old ones that would use my 7 speed cassette aren't available anymore. Does this sound correct? I have never had the need to check into any of this as I've never had a trainer before and the info has been a bit overwhelming to sift through and understand.
