I had poutine for the first time in Quebec. My impression was that someone had left over McD's fries, and emptied the other refrigerator leftovers on top, then covered it in gravy to try to make it palatable. Apparently it is great hangover food, though, lol. There are some "foodie" versions where I live that I have yet to try, the most interesting being from a Montreal Smoked Meat Deli-style restaurant which sounds pretty authentic. One thing for sure, though - do NOT eat it expecting to be able to ride after. Imagine a NY forgettaboutit lock in in your stomach, haha.
