Gee, I never go to the bathroom on the bike, however I have seen some riders go to the bathroom "while" on their bikes.

(Sorry I couldn't resist!)

There was actually a thread on this not too long ago with much advice on how to go on the fly. I'm sure you'll find it if you do a search.
