+1. I tour for up to two weeks at a time and never bring jeans. I have a pair of synthetic Columbia convertible pants. Since the legs zip off, they are my shorts and my long pants in case temps dip. Light and pack down relatively small. Unless you are going to be staying at the Four Seasons, you don't need anything fancy. Even for two weeks I will take one t-type shirt and something with sleeves if cool weather is possible. And I am camping, mind you. Two pairs of undies. It's not like you wear them for the entire day like you normally do. For three-day trips, I bring one pair.

If your cycling shoes are not walkable or you just like to get out of them at the end of the day like I do, get a cheap pair of footwear like sandals from PayLess or Wally World.

Travel size toiletries are your friend. You can find them in any major drug store chain. You can even get a collapsible toothbrush.

The rest of your list may be weather-dependent. When I am touring in the mountains out west in mid-June you can be damn sure I am going to bring cold/wet weather clothing. I've been caught in a storm at over 7,200' without the proper clothing. I can tell you that it's no fun. If I am headed towards the S. Jersey shore for a long weekend in July, that stuff is almost certainly going to stay at home because even if it does rain, it's not likely to be chilly.
