I would not attempt to mount a tire with much air at all in it, maybe just enough to not have it collapse on itself, but with the trouble you are experiencing, I would go totally deflated, leave the valve stem loose.
Pump at the ready and inflate asap after the tire is on the rim, with it partially inflated, just enough to take shape, then adjust the tire straight. Then say 80lbs then check again, then full pressure.
Ride it the next day.
