On my last two centuries, I didn't stop until I was over the 50+ mile point. I always wear a Camelbak when I ride. On a century I put about 16oz of Gatorade in the water so I am constantly getting electrolytes and some calories.

I have thought about doing a non-stop century. It would have to be fairly flat though. The ones I have done so far have had 3000 - 7200 ft of climbing.

In a hot climate you can load a Camelbak with icewater and it helps keep you cool. I used to live in Miami.
