A colleague purchased this gopro type action camera, on Amazon for about $60. It has WIFI support and a phone app, which I *think* means you can set up a limited network between your phone and this camera, and view the camera from the phone. A cheap phone could be the display then.

The video was very nice with built-in anti-shake and waterproof. I think it might work pretty well for the rear view setup.
