I learned that it's less about not getting the joint too hot as it is having an even temp across the joint. Al Eisentraut use to tell a story about visiting Italian frame shops and watching while entire head tubes and a few inches of TT and DT get bright orange hot during the brazing, using either multiple tips, one large rose bud or a hearth type of set up.
