Bikes: One too many

Yeah, I'm trying to slightly upgrade an old Kabuki touring frame, the bike is like new, but the chainrings are
52/44/36, so I would like lower gearing, for hauling rear panniers and hills, has an obscure crankset that
reads CUSTOM on the crank arms, can't find rings to fit, so I thought the Campy might work(good price)
on E-Bay. The derailluers are Suntour VX, but like new, I guess my goal is to improve the gearing and
comfort without spending a wad of money on a thirty year old mid range bike. The wheels are 27'' Mavic
and have 36 spokes on the rear. trying not to buy new wheels, not sure if 700's would fit etc, etc.
Thanks for the help, done a fair amount of riding over the years but not much wrenching, so this is kinda
new to me ....but its interesting.
