If I go full steel, I would be tempted tu buy a new bike from the same frame builder with comparative geometry. There are two models: the Piuma made of Columbus Spirit and Piuma Supreme made of Columbus Spirit SA (with oversized tapered headtube). I’m wondering if anyone can tell me what difference in riding I should expect from these two frames compare to mine.

Ah, Marinoni. Loved them when I first saw them many years ago. I ride a GURU Sidero, which I'm sure you know. It is Columbus Spirit w/CF fork. I've been riding for 40 years and this is my favorite bike. I also have a 2005 MASI Gran Criterium S which is AL w/CF fork and stays. I can't compare Spirit to Zona but my GURU w/SRAM Red, Speedplay Zero and Mavic Ksyrium Elite UST weighs in at 17 lb. 11 oz. It is very quick and comfortable. I would have no problem with either of the options you mentioned.
