AFAIK, 27.5 wheels are only 1" larger than 26" wheels. Just use a 26" rear and you'll lower the back of the bike 1/2", probably no big deal. You could make it up with a little bigger tire if necessary. How is this for a mismatch that my daughter loves? Needed to put a different front fork on the bike because the original didn't heav a front brake.
I was thinking about bigger, fatter tires to compensate for a smaller wheel. The OP would get a more cushy ride that way. As long as the frame can handle the extra width, I'd say GO FOR IT!
PS: I luv the way the ebike came out.
