If you just said, "call me when it's ready," I could easily it slipping in priority as new, paying customers came in.
If they are so busy they can't spend 15 minutes setting up a new bike, you may want to find a shop that is staffed adequately enough to do what they said they were going to do in a reasonable amount of time.
