I am at this moment at 5 weeks, 2 days, 6 hours from an "encounter" with a 150lb wild hog while riding my aero-bars at 20.1mph. Ahhh yes, I see now. With my age and my slower reaction time and without your ability to see into the future, I need to keep my hands on my bars and near my brakes. I guess riding without hands is probably also out. Getting old has so many drawbacks. PS - in 5 weeks and 2 days, I think I would stay home, if I were you.
