PS: Yes, I'm aware GRX cranks also require GRX front derailleur due to the slightly wider chain line.
FWIW I am running a GRX 11sp crank on a vintage road bike with 8sp 600 with no issue. Also have 2 bikes running 11sp XT cranks with 10sp chains and cassettes with no issues. GRX is friction, XT is indexed.
