Wil - I have a homemade device in which I put my rollers, that has wheel deflectors just outside the roller drums, and "bumpers" at shoulder height. I never fear going off the sides of the rollers, so riding no hands for any amount of time is no problem. I ride no hands while watching TV without a problem, but only because of the confidence from this device. I'm not sure how I'd do no-hands without it, but suspect it's somewhat dependent upon your confidence in riding no-hands in general - i.e. outside on the street.
