Not your exact situation, but I built up a bike using new ultegra hydro brifters and XT post mount calipers with no issue. So, you can definitely use post mount calipers with levers that are now packaged for use with flat mount calipers. The only "tricky part" is making sure you have all the right hose with the right fittings on both ends.
