The differences are largely cosmetic. Campagnolo, unsurprisingly, is the best finished. The spindle is rifled to reduce contamination of the bearings. Gipiemme is very similar to Campagnolo, with similar trapazoidal windows in the cage plates, but without the bevelling of the Campagnolo pedal's windows. Ofmega has diamond shaped windows in the cage plates, otherwise very much like the Gipiemme.
Fun fact: the spindles are interchangeable between all of these!
