I recommend a MTB setup for starters, since you can walk in the shoes and the pedals are easier to get into.
You can use most any brand of MTB shoe with any brand of pedal, the crucial part is the CLEAT. Each brand of MTB pedals have different designed cleats, so for instance you can't use a Shimano SPD cleat with a Time pedal, etc.
I personally use Time ATAC pedals and they are great. I have a pair of specialized something shoes. I think velcro straps are best cause you don't have to worry about laces and tucking them in. Also they are fast to put on.
