I have only moderate experience with disc brakes, but do have three bikes with Shimano hydraulic discs. Once the rotors are trued and "matched to the hub" (as you can imagine, you true them on the hub to account for any small variance in hub runout), I've not found the need to continually readjust them. Smaller rotors will be less fussy than larger ones (what size rotors do you have?).
